Beat the Margarine and sugar until light and
creamy. Then add eggs, one at a time and beat well, add vanilla. If the
mixture curdles add a little flour.
Sift flour, baking powder and salt and add milk to the margarine
mixture and mix well. The mixture must be of a smooth consistency. Pour
into a 9" greased and lined pans. Bake in a moderate oven until done,
then cool it. Invert one pan over a cake platter, spread half jam
over it, arrange half pineapple slices over it. It is better to cut pineapple
slices into 4, so that it is easier while cutting the cake. Put the second
layer over it, spread with the remaining jam and cover the whole cake with
whipped cream . Garnish with the remaining slices of pineapple and some
glace cherries or pistachio nuts.
The cake can be sprinkled with some cherry or rum if so desired. This
makes a good desert or can also be served with tea.
