1 kg Mixed fruits
2 litre Fresh Milk
3 Eggs
½ Litre fresh thick cream |
Vanilla or Strawberry essence
Pink Colour
Sugar to taste

Dice fruits and keep aside. Heat Milk in a
heavy pan on low heat. Add the sugar. Beat eggs with a little milk and add
gradually to the milk, mixing briskly so that a smooth custard is formed.
Boil for two minutes, remove from heat and cover. When cool, add fresh
cream and beat briskly with an egg-beater. Add essence and colour. Chill.
Add the fruit and freeze ice-cream in an ice-cream freezer.
Serve
garnished with a few pieces of diced fruit.
