1 cup sugar
1 ½ cup Butter
4 eggs
1 tsp nutmeg, cloves &
cinnamon powder |
2 cups flour sifted with 1 tsp
baking powder
3 cups mixed candied peel
(finely chopped)
½ cup walnuts or cashew nuts
(chopped)

Cream together Sugar and butter till sugar
dissolves. Add one egg at a time and beat well. Add spices and burnt
sugar, enough to make the cake a dark brown colour. add flour and blend
well. Add fruit and nuts. Mix well, cover with a wet cloth and allow to
stand for 2 hours. Line 2 cake trays with grease and greased paper. Gently
arrange the cake batter in the trays and spread out evenly. Bake in slow,
pre-heated oven. Remove cake from trays ½ hour after ready. Cut into
squares with a sharp knife.
